Some nights, you just want something that feels fancy — without spending hours in the kitchen. This Speedy Shrimp Scampi delivers restaurant-quality flavor in less time than it takes to scroll through your emails. It’s quick, light, and the perfect reward after a productive day of running your business!

Ingredients:

  • 1 lb raw shrimp, peeled and deveined
  • 3 tbsp butter (or olive oil)
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 8 oz Linguine pasta (or your favorite quick-cook pasta)
  • Salt, pepper, and parsley to taste

Instructions:

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add garlic and sauté until fragrant (about 1 minute).
  3. Toss in shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink.
  4. Squeeze in fresh lemon juice and toss with cooked pasta.
  5. Sprinkle with parsley and serve immediately — preferably with your feet up and your phone on silent.

Optional Boost: Add a handful of spinach or cherry tomatoes for extra color and nutrition.
