Savory Pork Chop Sheet Pan Dinner

After a long day of meetings, emails, and making things happen, the last thing you need is a complicated dinner. This Savory Pork Chop Sheet Pan Dinner is simple, satisfying, and cleanup is a breeze — leaving you more time to relax, recharge, or brainstorm your next big idea!

Ingredients:

  • 2–4 boneless pork chops
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups baby potatoes, halved
  • 2 cups of your favorite veggie mix

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. On a large baking sheet, toss potatoes and veggies with half the olive oil, garlic powder, paprika, salt, and pepper.
  3. Drizzle remaining olive oil over pork chops, season both sides, and place them on the same sheet pan.
  4. Roast for 20–25 minutes, flipping pork chops halfway through, until cooked through and veggies are tender.
  5. Serve hot — straight from the pan if you’re really keeping it simple!

Optional Boost: Add a drizzle of honey mustard or a squeeze of lemon over the pork before serving for an extra burst of flavor.
