Ingredients:
- 2–4 boneless pork chops
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups baby potatoes, halved
- 2 cups of your favorite veggie mix
Instructions:
- Preheat your oven to 425°F (220°C).
- On a large baking sheet, toss potatoes and veggies with half the olive oil, garlic powder, paprika, salt, and pepper.
- Drizzle remaining olive oil over pork chops, season both sides, and place them on the same sheet pan.
- Roast for 20–25 minutes, flipping pork chops halfway through, until cooked through and veggies are tender.
- Serve hot — straight from the pan if you’re really keeping it simple!
Optional Boost: Add a drizzle of honey mustard or a squeeze of lemon over the pork before serving for an extra burst of flavor.
