Ingredients

  • 2–3 boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes (drained and chopped)
  • 1 cup fresh spinach

Instructions

  1. Season the chicken with Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Cook chicken 5–6 minutes per side until golden and cooked through. Remove from skillet and set aside.
  4. In the same skillet, sauté garlic for about 30 seconds.
  5. Add chicken broth and scrape up those flavorful browned bits.
  6. Stir in heavy cream and Parmesan. Let simmer 3–5 minutes until slightly thickened.
