Quick Meal: Creamy Tuscan Chicken Skillet (Ready in 25 Minutes)

When your day has been packed with meetings, deadlines, and “just one more thing,” the last thing you want is a complicated dinner. This Creamy Tuscan Chicken Skillet feels restaurant-worthy — but it’s simple enough for a weeknight win.

Ingredients

  • 2–3 boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes (drained and chopped)
  • 1 cup fresh spinach

Instructions

  1. Season the chicken with Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Cook chicken 5–6 minutes per side until golden and cooked through. Remove from skillet and set aside.
  4. In the same skillet, sauté garlic for about 30 seconds.
  5. Add chicken broth and scrape up those flavorful browned bits.
  6. Stir in heavy cream and Parmesan. Let simmer 3–5 minutes until slightly thickened.
  7. Add sun-dried tomatoes and spinach. Stir until spinach wilts.
  8. Return chicken to the skillet and simmer another 3–4 minutes.

Serve over pasta, rice, or mashed potatoes — or keep it low-carb with roasted vegetables.
